Taro, white bean and tuna burgers Makes 10 large
Ingredients:
1 medium sized taro
2 x 400g cans butter, haricot or cannellini beans, drained and rinsed
425g can tuna in spring water, drained
2 spring onions, chopped
2 Tbsp lemon juice
1/3 cup fresh coriander, chopped
Method:
- Peel and dice the taro (don’t wash prior to peeling or wear rubber gloves to avoid itching). Place in a pot and cover with cold water. Bring to the boil and simmer until softened
- Drain and mash the taro, and mix with all other ingredients. Form burger patties from this mix
- Heat a frying pan and add a little oil. Cook the burgers on each side until golden brown
- If you are making lots of burgers you can cook them on each side in the frying pan then finish cooking in the oven
- Serve with a salad
