Pineapple Fried Rice
Ingredients:
2 eggs, lightly beaten
250g bacon, rind removed and sliced
1 red capsicum, chopped
1 green capsicum, chopped
4 spring onions, sliced
225 g can pineapple pieces, drained
4 c cooked white rice
1 tbsp soy sauce
Method:
Heat large frying pan and cook eggs in a little oil until set. Remove egg to a plate and cut into strips. Cook bacon in the pan for 2-3 min. Add capsicum, spring onions and pineapple. Cook for 1-2 mins. Add rice and soy sauce and toss together over medium heat until warmed through. Serve topped with egg.
